Backstein Bakery
Nestled in the garden of the Leipzig Contemporary Art Gallery, Backstein bakery is known for their sourdough bread. The secret to its taste is the long time the dough is left to mature and made divine with aromas. The bakery is inspired by French, Valais, and Italian recipes as well as their own spin on breads.
Pascal Hubertus, the man behind the bakery, only discovered his love of the craft late, shortly before his 40th birthday. The former graphic designer trained as a baker in the organic bakery Macis and since 2018, he along with his team have been delighting guests with breads, such as Monte Rosa which is inspired by Valais and made from 100% rye meal, or Deep Purple, a mixed wheat bread with toasted walnuts and figs. There’s also classic baguette, seasonally inspired focaccia, and some fine pastries.

If you’re curious about the fine art of baking then Backstein, open from Tuesday to Friday, is the place for you. Depending on the season, the bakery also offers the chance to relax in the garden of the gallery while you enjoy some bread or sweet and savory dishes. In the winter, don't miss a chance to try the panettone.
